Cinnamon Rolls

Terrie's Cinnamon Rolls

This makes a very large batch :) But if you have a big family like I do
They won't last long.

3 1/2 cups warm water in Large Bowl
3/4 cup Sugar
1/2 cup Vegetable Oil
6 Tablespoons Quick Rising Yeast (Yes 6 LOL)

Let sit for 15 minutes

Then add
1 Tablespoon Salt
3 Eggs
10 1/2 Cups Flour

Dough will be sticky to touch but get in there and knead it anyway
for approx 15 minutes.

Let dough sit for 10 minutes.

Then Oil a large counter top surface ( I have a large Island and I oil
1/2 of it My island is 10 ft long. ) Use plenty of veggie OIL
Just smear it all on the surface.

Dump out the Dough unto the OIL Do not use Flour
If you want Very large rolls divide dough into 2 halves this will make 24 rolls
I like them a little smaller in size so I divide dough into thirds and it will make 36
Each Division makes 12, so play with this as you like.

Take the first part of the dough and hand flatten it out unto your greased surface (Rectangle in size)
Brush with Melted Butter
then Add Sugar and Cinnamon, ( I make up a mix of 1 cup sugar to 2 Tablespoons Cinnamon)
Sprinkle with golden raisins or dark raisins if you want raisins
Add Chopped Nuts, if you like nuts, I use either pecan or walnut

Begin rolling up Large rectangle side until you have it all in a long roll
Cut into 12 equal portions.
Put on Cookie Sheet that has been greased. NOTE: if making large ones
only put 6 - 8 on your cookie sheet. They get big.

Do this with the remaining dough you have. Adding more oil to the surface
as needed.

Bake in 400 degree oven for 12 - 20 minutes depending on the size of the rolls

You can use canned frosting if you want
but I make my own with

1 cube butter melted
3 Pinches of salt (A pinch is salt between index finger and thumb)
2 Teaspoons Vanilla or sometimes I use Almond flavoring
6 cups powdered sugar
Milk ( add milk last you want it thin to spread or drizzle over, that depends on how
much milk you add. If you want to drizzle over make it thinner. ETC.

If you want orange frosting add orange concentrate to regular frosting
and the zest of one orange.

For a chocolate frosting just add baking cocoa and a few drops of water to
regular frosting mix.

Play around with it, Come up with different flavors Like Maple frosting etc

Then Just ENJOY!!!
